Metabolism-Boosting Soup

A metabolism-boosting, filling, and fiber-rich detox soup 🥣. At first, seeing all these vegetables together might make you wonder how they could turn into a soup, but once you taste the final flavor, you’ll realize it could easily replace many traditional soups. Especially during these winter days when our metabolism tends to slow down, you can prepare this nourishing and healing vegetable soup and enjoy it as a healthy meal replacement.

Ingredients

  • 2 medium zucchinis
  • 1–2 red capia peppers
  • 1/2 celery root
  • 1 tomato
  • 1 medium onion
  • 1–2 florets of broccoli
  • 1/4 bunch of parsley
  • 1/4 bunch of dill
  • 1 tablespoon olive oil
  • Salt, red pepper powder, and ground turmeric

Preparation

Sauté the onion in olive oil, then add the grated celery, zucchini, chopped vegetables, and spices. Cook until the vegetables release and reabsorb their juices. Then add boiling water until it covers the vegetables by about four fingers. Once the vegetables are cooked, blend the soup until smooth.
